Many studies show different histamine levels for a food, which is realistic for what you encounter with real foods in real settings. As an example, search “tomato” and you’ll see that a couple of tests showed fairly high (>100 mg/kg) histamine levels in tomatoes, while another study showed low histamine levels. This indicates that there is likely a wide range for histamine in tomatoes depending on the source, variety, and age of the tomato.
